Fluffy Eggnog Cinnamon Rolls

Imagine waking up on Christmas morning and being greeted by the sweet aroma of freshly-baked cinnamon rolls. This holiday treat has the power to evoke warm and cozy feelings in all of us. To make these soft and fluffy rolls even more festive, I added a hint of eggnog – a classic seasonal drink. While I used eggnog for this recipe, you can swap in different ingredients like apples, chocolate, or even nuts to add some texture or variety.

These rolls are so simple to make and require only a few common baking ingredients. The best part is that you can do most of the preparation the night before. Refrigerate the rolls until you’re ready to bake them, and enjoy a delicious crowd-pleasing breakfast without any hassle!

Eggnog Cinnamon Rolls

Prep time: 2 hours, Cook time: 20 minutes, Makes 12 rolls

Ingredients:

For the dough:

1.5 cup warm eggnog

2 ¼ tsp of active dry yeast

1/4 cup sugar (1/3 cup if you prefer them sweeter)

6 tbsp butter, melted

4 cups bread flour, more for dusting

1 egg plus 1 egg yolk, room temperature

¾ tsp salt

¼ cup heavy cream

For the filling:

2/3 cup light brown sugar

2 tbsp cinnamon

1/4 cup butter, softened

For the eggnog frosting:

4 oz cream cheese, room temperature

4 tbsp butter, room temperature

2 cups confectioners’ sugar (powdered)

2-3 tbsp eggnog

1 tsp vanilla extract

Pinch of salt

Directions:

  1. Pour warmed eggnog into a stand mixer bowl. Add yeast, sugar, eggs, salt, and melted butter. Mix well then stir in flour until dough forms.
  2. Using a dough hook, knead the dough on medium for 8-10 minutes. Add extra flour by the tablespoon if the dough is sticky. The dough should be smooth and slightly sticky.
  3. Transfer dough to an oiled bowl and cover with a warm towel. Let rise in a warm place for one hour or until doubled in size.
  4. While the dough rises, combine the filling ingredients and set aside.
  5. Once the dough has risen, roll the dough out on a well-floured surface and into an 18×12 inch rectangle. Spread the filling mixture over the dough. Start rolling the dough tightly from the short end.
  6. Cut into 1-inch sections with a sharp knife or dental floss (unflavoured).
  7. Place rolls in a greased and lined 9 x 13 pan. Cover with warmed towel and rise for another hour or until doubled.
  8. Brush heavy cream over the rolls before baking at 350F for 20-25 minutes or until golden brown.
  9. To make the frosting, combine the ingredients in a stand mixer and whisk until smooth and fluffy. Spread over rolls.
