Pumpkin Pie Spiced Granola Yogurt Parfait Recipe:

Serves: 3-4
Ingredients:
For the Pumpkin Pie Spiced Granola
3 cups rolled oats
½ cup pecans, chopped
¼ cup pepitas (pumpkin seeds)
3 tbsp maple syrup
2 tbsp olive oil (or melted butter)
1 tsp cinnamon
½ pumpkin pie spice
¼ tsp salt
For the Parfait
2 cups vanilla Greek yogurt, divided
1 cup pumpkin pie spiced granola
1/8 cup pumpkin puree
1 tsp maple syrup (optional)
½ tsp pumpkin pie spice
Fresh apple slices, for garnish
Directions:
For the Pumpkin Pie Spiced Granola
- Preheat the oven to 325F.
- Mix oats, pecans, and pepitas in a medium bowl.
- Whisk together maple syrup, oil, cinnamon, pumpkin pie spice, and salt in a small bowl.
- Pour liquid mixture over oats and stir until well coated.
- Spread over a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, stirring halfway, until golden and crunchy.
For the Parfait
- In a small bowl, combine one cup of the Greek yogurt with pumpkin puree, pumpkin pie spice, and maple syrup (optional). Stir well until smooth and creamy.
- In a glass, spoon a layer of vanilla yogurt at the bottom. Add a layer of spiced granola on top. Then, add a layer of pumpkin pie yogurt. Repeat layers until all ingredients are used, ending with granola on top.
- Garnish with sliced apples before serving.
