Think of this as brunch made beautiful without the fuss: a buttery puff pastry base topped with garlicky mushrooms, tender spinach, and gooey Gruyere, then baked with golden eggs cracked right on top. It looks impressive, but it’s delightfully simple—and the best part is serving it family-style. Place it at the center of the table, let everyone slice off a square, and enjoy with fresh microgreens. Created in partnership with our friend Christine Kozovski, who always brings fresh inspiration to the table, this slab pie is the kind of dish that feels restaurant-worthy but takes less than an hour, leaving you more time to sip coffee and chat.
Spinach & Mushroom Breakfast Slab Pie Recipe:
Prep Time: 5 minutes, Cook Time: 35 minutes, Total Time: 40 minutes
Serves: 2-4
Ingredients:
1 sheet frozen puff pastry, thawed
1 tbsp butter
4 large eggs, divided
1 cup cremini mushrooms, sliced
1 cup spinach
¼ cup gruyere cheese
Flour, for dusting
Microgreens, for serving
Salt and pepper, to taste
Directions:
- Preheat the oven to 400F.
- Melt butter in a skillet over medium heat. Add the mushrooms and sauté until softened (6-8 minutes). Add the spinach and cook until wilted (2-3 minutes). Season with salt and pepper. Set aside to cool.
- Roll puff pastry into a 9” square on a floured surface. Place on a lined baking sheet. Score a border around the edge (1/2 inch) and use a fork to create holes in the center of the dough.
- Crack one egg and whisk in a small bowl. Brush over pastry dough. Bake for 10 minutes.
- Remove puff pastry from the oven and press down any areas that may have puffed up. Add the mushroom and spinach mixture on top, staying within the borders of the pastry. Crack three eggs over the pastry. Add the gruyere cheese and bake for another 10-12 minutes, or until golden brown.
- Cool slightly and top with microgreens before slicing and serving.
