What better way to relive your favourite vacation memories, or daydream about future trips than with food? We’ve taken some of our favourite items from our Ice Cream Shoppe to create a tropical inspired ice cream recipe from scratch!
Tropical Mango Breeze Ice Cream Recipe
Ingredients
- 2 cups heavy cream, chilled
- 3/4 cup sugar
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large, ripe mangoes (ripe mangoes give slightly when you give them a gentle squeeze)
- 6 jackfruit bulbs (you can find canned or jarred jackfruit at most local grocery stores)
Toppings
- coconut shavings
- sweetened condensed milk
- crushed pistachios
- fresh mint
Instructions
Step 1: Whip the Cream
Add the heavy cream, vanilla and salt to large bowl. Beat with a whisk until soft peaks form, about 5 minutes. You can also use a hand mixer or stand mixer.
Step 2: Puree the Mango
Peel and dice the mango removing the large pit in the center. Add the diced mango and sugar to a blender, blend until smooth.
Step 3: Dice Up the Jack Fruit
Slice jackfruit into strips then dice into small chunks.

Step 4: Stir the Mango & Jackfruit Into the Cream
Pour the mango puree & jackfruit chunks into the whipped cream, and stir until well combined.


Step 5: Churn
Add the mixture to your ice cream maker, and churn according to the manufacturer’s specifications. This can take up to 20 minutes.

Step 6: Freeze
Add to a freezer-safe storage container. Freeze until the ice cream is set. This can take up to 3 hours.

Step 7: Add Toppings and Serve
Use coconut flakes, sweetened condensed milk, crushed pistachios and top with a sprig of mint!
Tip: A mortar and pestle is a great tool for crushing pistachios with ease!
